1. Cultivation
Our olive trees are organically cultivated without synthetic pesticides or fertilizers. Each tree is individually tended throughout the year to ensure optimal fruit development.
2. Hand Harvest
Olives are hand-picked at peak ripeness during the narrow harvest window. This careful selection ensures only the finest fruit makes it to the press.
3. Cold Pressing
Within hours of harvest, olives are cold-pressed at temperatures below 27°C to preserve their natural flavors, aromas, and nutritional compounds.
4. Filtration & Testing
The oil undergoes gentle natural filtration and rigorous quality testing. Each batch is verified for acidity, peroxide values, and polyphenol content.
5. Bottling & Numbering
Oil is bottled in dark glass to protect against light degradation. Each bottle is individually numbered, sealed, and labeled with its batch and harvest information.
